Turkey Meatballs

I love recipes that I can batch make and heat up quickly and still taste delicious. What I love more than that are recipes that my kids will also eat and I can prepare in a variety of ways.

I have made turkey meatballs for years and none have been good enough to share until I found this recipe from All Recipes. I made some tweaks and currently on my 3rd meal of enjoying them. If you look at the recipe on their site vs below, you will notice some differences.

With 30g of protein per serving, I feel good just grabbing a couple for a quick and easy meal.

Ingredients

  • 1.5 pounds ground turkey 
  • ½ cup  panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup feta cheese 
  • 1 large egg
  • ¼ cup chopped fresh parsley
  • kosher salt, pepper, garlic powder, onion powder, italian seasoning (measure with your heart) 

Directions

  • Preheat the oven to 375 degrees F 
  • Mix turkey, bread crumbs, Parmesan cheese, feta cheeese, egg, parsley, spices and salt together in a large bowl. Form meat mixture with wet hands into balls about 1 1/2 inches in diameter without handling or packing too hard.
  • Bake in the preheated oven until browned, about 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F.

How to Serve:

You can do whatever floats your boat. a couple ways I've enjoyed:
  • as a quick snack with no sugar added bbq sauce 
  • tossed in Rao’s tomato sauce over Gogo’s quinoa noodles
  • Chopped up and added to the kid’s mac and cheese 
  • chopped up and mixed with scrambled eggs with spinach, mushrooms, and onion 
  • Dip into a mix of greek yogurt, cucumber, lemon juice, dill, and garlic
  • over a spinach salad with artichokes and sundried tomatoes,
